SHRIMP SKEWERS WITH VEGETABLES
This recipe brings back nostalgic feelings of having dinner by the campfire with your family. I made this as a healthy treat for my family while on vacation in Idyllwild, and it was a hit!
SHRIMP SKEWERS WITH VEGETABLES
SERVINGS: 14 SKEWERS
PREP TIME: 20 MINUTES
COOKING TIME: 15-20 MINUTES
TOTAL TIME: 35-40 MINUTES
INGREDIENTS
Skewers:
2 bell peppers (any color, cut into chunks)
2 zucchini (cut into thick slices)
1 bag of frozen jumbo shrimp (thawed with skins and tails removed)
1 yellow onion (chopped into large pieces)
3 ears of corn (cut into thick slices)
1/2 teaspoon of garlic powder
1/2 teaspoon of onion powder
1 teaspoon of chili powder
1 teaspoon of Italian seasoning
1/2 teaspoon of curry powder
1 teaspoon of salt
2 tablespoons of olive oil
Peanut Sauce:
1/3 cup of crunchy peanut butter
1/4 teaspoon of grated ginger
2 tablespoons of maple syrup
2 tablespoons of coconut aminos
1 teaspoon of rice wine vinegar
1/2 teaspoon of sesame oil
2 tablespoons of hot water
INSTRUCTIONS
Prepare the Skewers
Put the chopped bell peppers, corn, shrimp, zucchini, and onion in a large bowl. Then, add all of the seasonings and olive oil to the bowl. Mix thoroughly with your hands until everything is evenly coated with seasoning.
Construct the Skewers
Grab several skewers and push the vegetables and shrimp onto each skewer (the order does not matter as long as you evenly distribute all ingredients among the skewers). Make sure to put 2 shrimp on each skewer.
Grill the Skewers
Heat the grill to medium-high, then grill each skewer until the shrimp is pink and slightly charred (about 15-20 minutes).
Make the Sauce
While the skewers cook, mix all of the sauce ingredients in one small bowl to make the peanut sauce.
Serve with Peanut Sauce on Top of the Skewers and Enjoy!
