SANDY’S ARTICHOKE PIE

This is a hearty dish, perfect for artichoke lovers. If you like artichoke dip, then this is the pie to make. It has loads of flavor but is surprisingly easy. This is a perfect dish for a dinner party and is sure to impress your guests.

Sandy’s Artichoke Pie

COOKING TIME: 45 MINUTES
TOTAL TIME: 65 MINUTES

INGREDIENTS

  • 4 oz. of cheddar cheese (grated)

  • 1 8 oz. package of mozzarella (grated)

  • 1 pie crust (like Pillsbury)

  • 2 cans of artichoke hearts in water (drained)

  • 2 large onions (chopped)

  • 1/4 lb butter

  • 1/4 cup of parmesan cheese

  • 4 eggs

Instructions

  1. Prep

    Preheat oven to 350 degrees.

  2. Make Artichoke Filling
    Melt butter and add chopped onions. Saute onions until slightly brown. Add drained artichokes to pan and saute.

  3. Prepare the Pie
    Flour pie crust and place in pie pan. Put artichoke mixture in pie pan. Beat eggs and place on top of artichokes. Sprinkle parmesan cheese on top. Place cheddar and mozzarella on top.

  4. Bake the Pie

    Bake the pie for 45 minutes until slightly brown on top.
