HAM FRIED RICE
This ham fried rice recipe is a signature dish of Mimi’s. My stepdad would make this recipe all the time when I first met him. Although it’s simple, the end result is a fresh and flavorful dish that will leave you wanting seconds. If you have leftover rice sitting in your fridge, this is the recipe to make.
Ham Fried Rice

COOKING TIME: 20 MINUTES
TOTAL TIME: 30 MINUTES
INGREDIENTS
6 cups of cooked, day old white rice (fresh rice works aswell)
4-5 ham slices
2-3 eggs scrambled (hard)
3 green onions
1/2 cup of grated carrots
1/2 cup of green peas
2 tablespoons of soy sauce
1 tablespoon of butter
Instructions
Prepare the Rice
If not using day old rice, boil 2 cups of rinsed white rice in 4 cups of water until water is absorbed (the drier the better).
Prepare the Ham
Chop ham slices into small squares and warm in a pan with soy sauce.Crisp up Rice
Add butter to pan and fold in rice with ham. Raise heat and add more butter as needed to “crisp up” the rice.
Add Ingredients
Add grated carrots, peas, green onions, and eggs and continue to stir and fold allowing the bottom layer of the rice to get browned. Turn often. The crispier you get the rice, the better.
Serve and Enjoy!
Add more soy sauce to taste.
