CHOCOLATE DATE CARAMEL BARS

This is a chocolatey sweet, not-so-sinful treat. Dates are naturally sweet and packed with fiber, potassium, magnesium, vitamin B6, iron, and even some protein. For a quick and easy indulgence, I love these bars.

CHOCOLATE DATE CARAMEL BARS

INGREDIENTS

  • 1 cup of almond flour

  • 1/8 cup of maple syrup

  • 1 tablespoon of coconut oil

  • 1 tablespoon of flaxseed

  • 3 tablespoons of cocoa powder (unsweetened)

  • 10 dates (pitted)

  • 1/2 teaspoon of vanilla powder

  • 1/4 cup of coconut water

  • Melted dark chocolate (I used about 4 squares of 72% cocoa Ghirardelli chocolate)

  • Toasted coconut flakes

  • Pinch of salt

INSTRUCTIONS

  1. Prep

    Soak your dates in warm water for about 15 minutes. While they are soaking, mix the almond flour, 2 tablespoons of cocoa powder, coconut oil, flaxseeds, and maple syrup. Press that mixture into a lined medium sized container or mold.

  2. Caramel

    Once the dates are finished soaking, put them in a blender with 1 tablespoon of cocoa powder, vanilla powder, coconut water, and a pinch of salt and blend.

  3. Finish and Freeze

    Once caramel is fully blended, add it to the base that you created. Finally, top with the melted chocolate and coconut flakes. Put them in the freezer until frozen.

  4. Serve and Enjoy!

    Enjoy these as a little sweet treat or frozen desert. They taste like samoas!
