GRILLED SALMON PACKETS
A camping- and travel-friendly meal that is satisfying and fresh. My mom and I prepared these packets before we left on our trip to Palm Springs and cooked them the day we arrived for dinner!
GRILLED SALMON PACKETS

COOKING TIME: 20-25 MINUTES
TOTAL TIME: 40-45 MINUTES
INGREDIENTS
Salmon Packets
5 salmon fillets
1 cup of baby bella mushrooms (sliced)
25-50 asparagus stalks (depending on size; with the ends cut off)
1 red bell pepper (cut into strips)
3 lemons (sliced)
1/3 cup of parsley (chopped)
Salt and pepper to season
Red pepper to season
2-3 tablespoons of olive oil
Pesto
2 cups of fresh basil
1/3 cup of pine nuts
1/2 cup of parmesan (grated)
1/3 cup of olive oil
4 garlic cloves
1 teaspoon of lemon juice
½ teaspoon of salt
INSTRUCTIONS
Prepare the Packets
Season both sides of all the salmon fillets with salt and pepper. Place each fillet on large, separate pieces of tin foil. Sprinkle each fillet with red pepper and top with 3 slices of lemon. Next to each fillet on the tin foil, evenly distribute the asparagus, bell pepper, and mushrooms. Drizzle each fillet with olive oil and sprinkle with parsley. Fold each foil closed as if you were wrapping a present.
Grill the Salmon
Once the salmon is ready to be grilled, heat the grill to 425 degrees. Grill the packets for about 20 to 25 minutes in the foil.
Make the Pesto
While the salmon is grilling, add all of the pesto ingredients to a food processor and blend until all of the ingredients are fully incorporated and the texture is smooth.
Serve in the packets with the lemons removed and pesto spread on top!
Add a squeeze of lemon juice for an extra tangy kick.
