SHRIMP FETTUCCINE
This is a quick and easy recipe that can be whipped up with ingredients that are easy to find around the house when you don’t have any dinner ideas on a lazy Sunday night. It is the reason why I have my freezer stocked with frozen shrimp.

TOTAL TIME: 30 MINUTES
INGREDIENTS
1 bag of frozen shrimped (thawed, peeled, and de-veined)
4 cloves of garlic (chopped)
¼ cup of white wine
¼ cup of olive oil
¼ cup of pasta water
1 teaspoon of red chili flakes
1 cup of cherry tomatoes
Zest of 1 lemon
1 tablespoon and 1 teaspoon of salt
1 box of fettuccine
¼ cup of fresh basil (chopped)
Parmesan for seasoning
1 lemon for wedge garnishes
INSTRUCTIONS
Prep
Bring a large pot of water to boil with 1 tablespoon of salt. Heat a large saucepan over medium heat, and once hot add the olive oil. Sauté garlic until fragrant (about 2 minutes). Add the tomatoes and allow them to cook until they blister. Then add the white wine, lemon zest, and salt.
Cook the Shrimp and Pasta
Add the fettuccine to the boiling water and let cook until al dente or follow box instructions. Add the shrimp to the large saucepan and flip after 2 minutes and cook for two more. Add red pepper flakes. Once pasta is cooked, add ¼ cup of the leftover pasta water to the saucepan. Add pasta to the saucepan, and if needed move the pasta and the sauce into a large bowl to mix. Add the basil to the pasta and mix.
Serve
Enjoy with parmesan and extra salt and red pepper if needed.
