HERBY TURKEY MEATBALLS

These turkey meatballs are a quick, protein-rich, last-minute dinner that can be served in a pita with hummus and veggies, with spaghetti and red sauce, or buy themself!

HERBY TURKEY MEATBALLS

INGREDIENTS

  • ½ yellow onion (grated)

  • 1 egg

  • 2 tablespoons of plain greek yogurt

  • ¼ cup of breadcrumbs

  • ¼ cup of chickpea flour

  • ½ cup of fresh Parmesan (grated)

  • 3 cloves of garlic (minced)

  • 2 tablespoons of fresh basil (chopped), or 1 teaspoon of dried basil

  • 2 tablespoons of fresh parsley (chopped), or 1 teaspoon of dried parsley

  • 1 tablespoon of fresh thyme (chopped), or ½ teaspoon of dried thyme

  • ½ teaspoon of dried oregano

  • 3 oz. of white mushrooms (minced)

  • 1 pound of ground turkey meat

  • ½ teaspoon of salt

  • ½ teaspoon of pepper

  • Olive oil to brush or spray on the formed meatballs

INSTRUCTIONS

  1. Prep

    Preheat your oven to 400 degrees and a baking sheet with parchment.

  2. Make the Meatballs

    Mix all of the ingredients with your hands (except for the olive oil), adding the turkey meat last. Don’t over mix. Lightly spray your hands with olive oil and form medium sized balls (a heaping tablespoon) balls with the meat mixture. Place all the balls on the baking sheet.

  3. Cook the Meatballs

    Once all meatballs are formed, spray or brush each lightly with olive oil. Place in the oven and bake for about 16-21 (internal temperature should be 160 degrees.

  4. Serve and Enjoy!

    Eat with pita and hummus or on top of spaghetti!
