LEMON POPPYSEED PANCAKES

This is a great breakfast to treat yourself or your family to! It’s sweet with a tangy twist from the lemon that is sure to satisfy your breakfast cravings!

LEMON POPPYSEED PANCAKES

INGREDIENTS

  • 1 ½ cups of all-purpose flour (or bread flour)

  • 3 ½ teaspoons of baking powder

  • ½ cup + 1 tablespoon of maple syrup

  • ¼ teaspoon of salt

  • 1 ½ cups of milk

  • 2 ½ tablespoons of butter (melted)

  • 1 egg

  • 3 tablespoons + 2 tablespoons of lemon juice

  • 1 ½ tablespoons of poppyseeds

INSTRUCTIONS

  1. Prepare the Batter

    In a large bowl, sift together the flour, baking powder, salt and mix. Create a hole in the center of the bowl and add the 1 tablespoon of maple syrup, egg, milk, butter, poppyseeds, and 3 tablespoons of lemon juice and combine.

  2. Cook the Pancakes

    Heat a stainless steel pan on medium heat and once hot add butter or olive oil. Add as much batter as you want to make each pancake depending on how big you want each pancake to be. Flip each pancake when you start to see bubbles forming.

  3. Make the Lemon Glaze

    In a small bowl, mix the 2 tablespoons of lemon juice with the ½ cup of maple syrup (or replace with powdered sugar).

  4. Serve and Enjoy!
