SPINACH AND FETA PUFF PASTRY

This is a simple recipe that is both indulgent and tasty, while still being an easy way to incorporate spinach into your diet. You can add anything to the filling, such as onions or shallots, to make it your own.

SPINACH AND FETA PUFF PASTRY

INGREDIENTS

  • 3 handfuls of spinach (chopped)

  • 3 cloves of garlic (minced)

  • 13 oz. of rolled out puff pastry (I used packaged puff pastry)

  • 1 tablespoon of olive oil

  • 3 oz. of feta cheese

  • 1 teaspoon of salt

  • 1 teaspoon of onion powder

  • 1 egg (mixed with water for egg wash)

INSTRUCTIONS

  1. Prep

    Preheat your oven to 400 degrees on convection bake, 425 degrees on regular bake, or follow the instructions on your puff pastry package.

  2. Prepare the Spinach Filling

    Heat a pan on medium heat, and once hot, add the olive oil and sautè the garlic and spinach until the spinach is wilted. Then add the salt and onion powder. In a bowl, mix this mixture with the feta cheese.

  3. Prepare the Puff Pastry

    Cut the pastry into 8 equal-sized rectangles (you may have extra dough). Cut three slits into four of the rectangles. Transfer the four pieces of pastry without the slits onto a baking sheet lined with parchment paper. Place the filling equally onto each piece of pastry without the slits. Cover those pieces of pastry with the remaining pieces and press the edges closed with a fork.

  4. Bake

    Bake the puff pastry in the oven for about 15 minutes or until golden brown.

  5. Serve and Enjoy!
