THANKSGIVING LEFTOVER TURKEY SALAD

This recipe was inspired by a salad my mom used to love from a restaurant where she worked. I decided to put a little twist on my mom’s delicious recipe by using turkey instead of chicken. Since Thanksgiving just passed, and it is always difficult to get rid of leftovers, this is a terrific option for a post-Thanksgiving meal. 

THANKSGIVING LEFTOVER TURKEY SALAD

COOKING TIME: 0 MINUTES
TOTAL TIME: 15 MINUTES

INGREDIENTS

  • 2 turkey breasts (or chicken)

  • 4 stalks of celery (chopped)

  • ½ cup of red grapes

  • ½ cup of vegan mayo (you can use regular mayo)

  • 2 teaspoons of curry powder

  • Salt and pepper to taste

INSTRUCTIONS

  1. Prepare the Ingredients

    Chop the grapes into quarters and chop the turkey/chicken breast into squares.

  2. Assemble the Salad

    In a large bowl, toss all of the ingredients together with salt and pepper to your liking.

  3. Serve and Enjoy!

    You can enjoy this on top of leftover Hawaiian rolls and cranberry sauce from Thanksgiving dinner!
