SUMMER CAPRESE SALAD
I make this salad whenever I have a hankering for a fresh and light snack, especially in the summer. It is a simple classic that never gets old. My favorite way to eat this salad is on top of a slice of toasted baguette, but you can also enjoy it by itself or as a side dish for dinner.
Summer Caprese Salad

PREP TIME: 15 MINUTES
COOKING TIME: 5 MINUTES
TOTAL TIME: 20 MINUTES
INGREDIENTS
1 cup of cherry tomatoes
1 large handful of basil
8 oz. of mozzarella pearls
1/4 cup of olive oil
1/4 cup of balsamic vinegar
1 teaspoon of salt
1 teaspoon of Italian seasoning
1 teaspoon of red pepper flakes
1/2 teaspoon of oregano
Pepper to season
Bread of choice (baguette, sourdough loaf, etc.)
Instructions
Prep
Cut your bread into slices and toast it in the oven at 400 degrees for 5-8 minutes or in the toaster. Cut your tomatoes into quarters and set aside.
Prepare the Vinaigrette
Mix the olive oil, balsamic vinegar, salt, Italian seasoning, red pepper flakes, oregano, and some pepper together to create your vinaigrette.Assemble the Salad
In a large bowl combine your tomatoes, basil, mozzarella pearls, and your vinaigrette.Serve
Serve on your toasted bread and enjoy!
