PUMPKIN BREAD

This is a delicacy among my dads side of the family and I understand why. Mimi typically gives everyone a loaf of her famous pumpkin bread and my dad is always the first to eat it all. To help the bread moisten naturally, Mimi says to keep it wrapped in saran wrap for 24 hours. Mimi enjoys a slice of pumpkin bread microwaved with butter for breakfast.

Pumpkin Bread

SERVINGS: 2-3 LARGE LOAFS
PREP TIME: 10 MINUTES
COOKING TIME: 60 MINUTES
TOTAL TIME: 70 MINUTES

INGREDIENTS

  • 3 1/2 cups of flour

  • 3 cups of sugar

  • 1 cup of baking oil of choice

  • 4 eggs

  • 2 teaspoons of baking soda

  • 1 1/2 teaspoons of salt

  • 3 teaspoons of cinnamon (you can always add extra)

  • 3 teaspoons of nutmeg

  • 2/3 cup of water

  • 2 cups of prepared pumpkin (small can)

  • Chopped walnuts (optional)

Instructions

  1. Prepare the Batter

    Preheat your oven to 350 degrees. Mix all ingredients together in a large bowl and pour into greased pans.

  2. Cook the Pumpkin Bread
    Bake for 60 minutes, serve and enjoy!
