EVERYTHING PROTEIN SALAD

This recipe was created when I made a salad by combining some of my favorite things (feta cheese, avocado, and chickpeas), but after creating the base of this salad, I realized it needed a little more protein to make it properly satiating. So, I added some chicken and egg for protein and some sweet potato for extra flavor. To be honest, this is one of my favorite recipes.

Everything Protein Salad

COOKING TIME: 15 MINUTES
TOTAL TIME: 35 MINUTES

INGREDIENTS

  • 1 can of chickpeas (drained and rinsed)

  • 1 avocado (diced)

  • 1/2 cup of crumbled feta cheese

  • 1/2 cup of red onion (thinly sliced)

  • 1/2 cup of fresh parsley (chopped)

  • 2 tablespoons of fresh dill (chopped)

  • 1 chicken breast (grilled, we use a George Forman grill)

  • 1/2 of a large sweet potato (cooked and diced)

  • 2 hard-boiled eggs (diced)

  • 3 tablespoons of olive oil

  • 2 tablespoons of lemon juice (freshly squeezed)

  • 1 garlic clove (minced)

  • 1/2 teaspoon of oregano

  • Salt and pepper to season

  • Cherry tomatoes (optional)

INSTRUCTIONS

  1. Prep

    Chop up your grilled chicken and add it to a large bowl with the chickpeas, avocado, feta cheese, onion, parsley, dill, sweet potato, and hard-boiled egg.

  2. Prepare the Dressing

    Mix together olive oil, lemon juice, garlic, oregano, and some salt and pepper.

  3. Finish the Salad

    Add your dressing to the bowl and toss the salad until the dressing is fully incorporated into the salad.
