BROWNIE MUG CAKE
Perfect for chocolate lovers, this mug cake is decadent and rich, while not being heavy on your stomach. This is a great nightly sweet treat with bonus nutritional benefits.

INGREDIENTS
1 tablespoon of butter
1 tablespoon coconut flour
1 tablespoon of sweetener (maple syrup, honey, coconut sugar, stevia)(I used coconut sugar)
1 egg
1 tablespoon of unsweetened cocoa powder
½ teaspoon of baking powder
2 tablespoons of 72% cocoa chocolate (chopped)
Pinch of flaky sea salt/maldon salt
¼ teaspoon of vanilla extract
¼ cup of unsweetened greek yogurt
1 tablespoon of honey
Strawberries for topping
Raspberries for topping
INSTRUCTIONS
Prep the Batter
In a large mug, melt the butter in the microwave in 30 second increments. Once melted, add the coconut flour, sweetener, egg, cocoa powder, baking powder, and vanilla extract. Mix then add the chopped dark chocolate and mix again.
Cook the Mug Cake
Sprinkle the batter with a pinch of flaky sea salt/maldon salt and microwave on high for 60 seconds.
Prepare the Toppings
In a separate dish, mix the greek yogurt with the honey. Rinse strawberries and raspberries for topping.
Serve!
Once the mug cake is cooked, top with the sweetened yogurt, berries, and enjoy!
