MEDITERRANEAN STYLE CHICKEN SKEWERS
Despite the fact that this recipe is essentially pure vegetables and chicken with seasoning, it tastes like a flavorful dish that is satiating but not heavy. The seasoning gives it a slight kick, that my dad happened to love. You can easily save leftovers for school lunch by taking them off of the skewers and packing them in a container.

MEDITERRANEAN STYLE CHICKEN SKEWERS

INGREDIENTS
2 large chicken breasts (cut into cubes)
Skewers
¼ teaspoon of oregano
¼ teaspoon of paprika
¼ teaspoon of chili powder
¼ teaspoon of cumin
¼ teaspoon of cayenne
¼ teaspoon of onion powder
1 teaspoon of salt
Pepper to season
¼ teaspoon of garlic powder
1 red onion (chopped into large pieces)
1 bell pepper (chopped into large pieces)
1 zucchini (chopped into large pieces)
3 tablespoons of olive oil
Pita bread (to side)
Hummus (to side)
INSTRUCTIONS
Prep Chicken and Veggies
Preheat your oven to 425 degrees Fahrenheit. In a large bowl, add all chopped vegges and cubed chicken. To the bowl, add the olive oil, pepper, salt, garlic powder, onion powder, cayenne, cumin, chili powder, paprika, and oregano. Mix everything with your hands until the seasoning is evenly coating every piece of chicken and vegetable.
Assemble the Skewers
Assemble the skewers by putting the chicken and vegetables on the skewers in any order you like, while going in a pattern to ensure you use an even amount of each veggie and the chicken on each skewer. Place all assembled skewers on a baking sheet lined with parchment paper.
Cook the Skewers
Once all skewers are assembled and the oven is fully preheated, place the baking sheet in the oven and bake for 15 minutes. After 15 minutes, before removing, broil the skewers for 3-4 minutes.
Serve and Enjoy!
Serve with a dollop of hummus and a side of pita bread to complete the meal!
